Preheat the Oven: Preheat your oven to 375°F (190°C).
Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds. Drizzle the insides with olive oil and season with salt and pepper.
Make the Filling: In a large bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, cumin, and half of the shredded cheddar cheese. Season with salt and pepper.
Stuff the Peppers: Fill each bell pepper with the quinoa mixture. Place the stuffed peppers in a baking dish and top with the remaining cheese.
Bake: Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
