Cook the Noodles: Preheat the oven to 375°F (190°C). Cook the lasagna noodles according to package instructions, then drain and set aside.
Sauté the Vegetables: In a large pan, heat the olive oil over medium heat. Add the onion, garlic, zucchini, and bell pepper. Sauté until the vegetables are softened, about 5-7 minutes. Season with salt and pepper.
Assemble the Lasagna: Spread a thin layer of marinara sauce on the bottom of a baking dish. Layer 3 lasagna noodles on top, followed by a layer of the sautéed vegetables, a dollop of ricotta cheese, and a sprinkle of mozzarella. Repeat these layers, finishing with a layer of marinara sauce and a final sprinkle of mozzarella cheese.
